Javanese noodles are a favorite dish when visiting areas in Yogyakarta, especially Gunungkidul. Consisting of yellow noodles and vermicelli, Javanese noodles are generally served with a little sauce. There are also fried Javanese noodles.
If you haven't had time to visit Gunungkidul directly to enjoy Javanese noodles, you can copy the following recipe to cook the dish yourself. Pay attention to the cooking tips too, to create the typical Gunungkidul Javanese noodle taste.

Ingredients and how to make it

  • 3 cloves of garlic
  • 1 clove of red onion
  • 1 candlenut
  • a pinch of ebi

Supplementary material:

  • 50 grams of yellow noodles
  • 50 grams of vermicelli
  • 3 tbsp shredded free-range chicken
  • 1 duck egg
  • 3 cabbage leaves, cut into small pieces
  • enough carrots, cut into matchsticks
  • 1 sprig of spring onion, chopped
  • 1/2 red tomato, cut into two parts
  • 2 whole green cayenne pepper cloves
  • 60 ml free-range chicken stock
  • fried onions to taste

How to cook:

  1. Heat a frying pan or Teflon without oil. Roast the duo of onions, candlenuts and ebi until the aroma comes out. Remove and grind the ingredients. Set aside.
  2. Heat a little oil in a frying pan, then add the ground spices. Saute briefly until fragrant.
  3. Add duck eggs, stir briefly. Add free-range chicken stock little by little. Stir for a moment.
  4. Add chopped cabbage, carrots, tomatoes and free-range chicken. Stir again. If you feel like there's not enough water, you can add more free-range chicken stock.
  5. Put the yellow noodles and vermicelli into the pan. Stir it around.
  6. Add salt to taste and a pinch of vetsin if you like. Don't forget to correct the taste, okay?
  7. Lastly, add the chopped spring onions. Stir well.
  8. Turn off the heat, then serve the typical Gunungkidul Javanese noodles sprinkled with fried onions and green cayenne pepper.

Cooking tips:

  1. Duck eggs can be replaced with free-range chicken eggs. However, don't use domestic chicken eggs because they don't taste delicious.
  2. To make free-range chicken stock, boil free-range chicken pieces with spring onions. The mixture of eggs and free-range chicken stock is what creates the typical Gunungkidul Javanese noodle taste.
  3. If you don't like MSG, to add more flavor, you can add ebi when making ground spices.
